This may be an overly simple answer, but China lunar calendar is an alternative way of keeping time to the Gregorian calendar. In fact, we had had that for thousands of years, so that was before Gregorian calendar came into being. It was important for agricultural activities.

Chinese New Year Day is the first day of the lunar year, and understandably it is very important in our culture.

That's a very broad question. I am not sure which specific aspects you are looking for.   Simply put, there are 12 different animals being rotated year after year. This year is ox as you all know. 

There are also many (slightly different) folklores about how they were initially assigned.

I suppose that you meant CHN, as in China? Anyway, some argues (and I agree) Confucianism isn't truly a religion, but China has been heavily influenced by Confucianism for about two thousand years, since Han Dynasty when the emperor decided to promote it. I think it is safe to argue that till today, it is still affecting the majority of China and Chinese people, for better or for worse.

Buddhism has always been popular in China since Tang Dynasty when we imported it from India , but in the past 100 years (?), Christianity has been gaining a lot of momentum and has had a lot of followers

My knowledge is only amateurish on religions, and that's pretty much all that I know. If you want more in-depth insight, you may have to Google it yourself.
